Baking has a long history: in the West, it originated from the need to provide sustenance, with bread becoming a staple food that continues to this day. In China, baking emerged out of rituals and banquet traditions, where baked goods historically served primarily as side dishes rather than main meals. Thanks to China’s vast geography and rich cultural diversity, traditional pastries have evolved into distinct regional styles, each shaped by unique craftsmanship and local influences. For instance, Beijing-style pastries are known for their rich, buttery textures—light on sugar yet delightfully flaky, soft, and chewy. Suzhou-style pastries, on the other hand, lean toward sweeter flavors, using premium ingredients that emphasize nourishment and health benefits. Meanwhile, Cantonese pastries showcase a delightful fusion of Western influences, offering light, refreshing tastes and beautifully crafted designs.
Data shows that in 2021, China's (mainland) bakery market exceeded 260.08 billion yuan, representing a year-on-year growth of 19.9%. The market is projected to reach 306.99 billion yuan by 2023. Yet, despite this rapidly expanding market, no single bakery brand has managed to establish a chain with over 1,000 stores so far. Moreover, the industry's CR5—referring to the combined market share of the top five players—stands at just 11%, highlighting the current landscape of "a large market with many small brands."
According to the China Research Institute of Industry's "2022-2027 China Baked Goods Industry Development Trends and Investment Risk Report":
China's baked cake market has been growing rapidly, with a compound annual growth rate of 11% from 2016 to 2020. By 2021, the market size is expected to surpass 280 billion yuan. Furthermore, the Chinese baking industry is projected to reach a market value of 306.99 billion yuan by 2023.
As the baking industry rapidly expands, capital is also pouring into the sector at an accelerating pace. To keep up with this momentum, cross-industry marketing strategies, the introduction of influencer-driven products, efforts to rejuvenate established brands, and the emergence of new consumption scenarios centered around semi-prepared goods are all injecting fresh energy into the industry.
Affected by the pandemic, the CAGR from 2016 to 2021 declined to around 7.7%. Looking ahead to the next five years, the average annual compound growth rate is expected to rise to nearly 8.5% between 2021 and 2026, signaling an anticipated improvement in industry optimism. Meanwhile, per capita sales of China's baked goods continue to show strong growth, surpassing 174 yuan in 2021.
